The extension, re-development and refurbishment of Cork City's Montenotte Hotel was a challenging project. We worked with the hotelier to imagine a framework plan for the entire property and then managed a planning, tender and construction process over five phases, dealing with a live environment and challenging site conditions. Having recently completed Phase II, the hotel is viewed as an exemplar in the city, with enviable hospitality and event spaces, a new spa and cinema, an expanded outdoor terrace and verdant formal gardens, as well as 150 no. newly decorated bedrooms. The re-developed hotel has won a number of industry awards and is enjoying an exceptional re-birth.

The Dingle Skellig Hotel is a renowned and favourite family hotel and wedding venue in this scenic coastal town.
The hotel enjoys an international reputation for its hospitality and after extensive local authority and stakeholder consultation, we secured planning permission for 34 new bedrooms and a major extension and redevelopment of the reception and banqueting facilities.
Key to the project was our interior design of the new rooms, as well a a new restaurant, function and refurbishment of the existing bar facilities.
We worked with the client from concept through to all material and furniture choices, guiding them through a clear and well-developed understanding of their brief and expectations.
The construction occurred whilst the hotel was still ‘live’, so our designs ensured that the contractor and the hotel operators were able to keep the hotel open, whilst minimising disruption for guests.

Project InfoWe have a dedicated design team developing high-quality and commercially feasible hotels, bars and restaurants in response to the fast-changing Irish hospitality and leisure market. We bring to the table a host of lessons learned from the recent difficult boom and bust period, and we have gained a reputation for bringing innovative thinking to complicated design challenges.
We work across all levels of hospitality from luxury properties, 5 star hotels, top class restaurants and bars through to budget-friendly accommodation.
We enjoy questioning preconceptions and have been instrumental in developing the concept of the ‘micro-hotel’. Working with Fáilte Ireland, the state’s hospitality accreditation agency, we developed a “new way of thinking” within the National Quality Framework; allowing for greater innovation and the provision of non-standard, smaller hotel rooms in specific contexts.
Our in-house interior design skills mean that we can offer a fully comprehensive and holistic design service, where concepts blend seamlessly from outside to inside, adding efficiencies in the process for clients as well as contractors.

The fit-out of Rachel Allen's restaurant was a successful, fast-tracked fit-out project. The site was a challenging 500 m2 retail unit combining several previously disconnected rooms into one coherent space, all located with a multi-tenancy building. As well as being principal interior designers, we were tasked with managing the technical and statutory processes while balancing the aesthetic design of the restaurant itself. Our role was all-encompassing; managing a client team with the view of achieving a high quality fit-out on a budget, whilst delivering very aesthetic goals. The mix of natural materials, sculptures and sense of craftsmanship infuse this large space with a feeling of intimacy, reflecting the client’s strong aesthetic and brand identity.

Dromquinna Manor is an important 19th century heritage property on exceptional grounds on the shore of Kenmare Bay. Meitheal worked with the property’s new owner to acquire planning permission and re-develop the existing property, provide new banqueting and hospitality spaces, construct a new waterfront bistro and pontoon, and to re-develop aspects of the grounds into a boutique glamping location. The property has been listed as one of Condé Nast’s world travel destination experiences and has traded exceptionally since re-opening in 2016.

An energetic and focused client with a challenging site in an historic location demanded a unique and creative solution. The resulting permission for this new city sleeper/micro-hotel concept delivering an extremely high yield to plot ratio on a fully enclosed site. From the very beginning we worked closely with our clients and Fáilte Ireland to develop the new Welcome Standard for a modern sleeper room concept that reflects the needs and aspirations of the modern traveller. The excellent planning result breaks new ground for density and height, without compromising the strong urban context. The Windsor Hotel design allows both a strong commercial model and identifiable character for a new and unique Cork hotel offering. The project is now on-site.
